Hey, and welcome to the wiki! I haven't thought about the dungeons yet, but your idea sounds pretty good to me. Feel free to make the tables however you feel works best (although you might want to ask permission if you want to copy it directly); it's just the two of us right now, so you won't get much flak if you decide on changing it quite a bit.
